Ingredients:
Dry:
- 2 cups almond meal
- 1/2 cup ground flaxseed
- 1/4 cup psyllium husk
- 1 1/2 teaspoon baking soda
- 2 teaspoon cinnamon
- 3 to 4 dates, chopped
- 1/2 cup Lily’s chocolate chips
Wet:
- 2 to 3 very ripe bananas, mashed
- 3 eggs, lightly beaten
- 1/4 cup almond milk
- 2 teaspoon coconut oil, melted
- 1 teaspoon vanilla extract
- 2 to 3 teaspoons high fiber vanilla syrup
Preparation:
- Preheat the oven to 320°
- Place all dry ingredients into a large mixing bowl and stir until combined
- Combine wet ingredients, either blend them or mix them together by hand
- Slowly add the wet mixture to the dry ingredients and mix until just combined
- Lightly spray the bread pan with avocado oil and spoon the batter into the pan
- Bake for one hour until golden and cooked through A skewer should be used to test to make sure it comes out dry
- Once cool, turn the pan upside down and remove from the loaf pan.
- Slice and serve
