CarpenterOne80 Signature Banana Bread

Ingredients:

Dry:

  • 2 cups almond meal
  • 1/2 cup ground flaxseed
  • 1/4 cup psyllium husk
  • 1 1/2 teaspoon baking soda
  • 2 teaspoon cinnamon
  • 3 to 4 dates, chopped
  • 1/2 cup Lily’s chocolate chips

Wet:

  • 2 to 3 very ripe bananas, mashed
  • 3 eggs, lightly beaten
  • 1/4 cup almond milk
  • 2 teaspoon coconut oil, melted
  • 1 teaspoon vanilla extract
  • 2 to 3 teaspoons high fiber vanilla syrup

Preparation:

  1. Preheat the oven to 320°
  2. Place all dry ingredients into a large mixing bowl and stir until combined
  3. Combine wet ingredients, either blend them or mix them together by hand
  4. Slowly add the wet mixture to the dry ingredients and mix until just combined
  5. Lightly spray the bread pan with avocado oil and spoon the batter into the pan
  6. Bake for one hour until golden and cooked through A skewer should be used to test to make sure it comes out dry
  7. Once cool, turn the pan upside down and remove from the loaf pan.
  8. Slice and serve

Serves 12, serving size 1 slice
