This simple meal turned out so good I had to share. I make this using it whatever is in the fridge. 1/2 red onion, 1 leek, and 1/2 zucchini. I chopped everything finely and sautéed the veggies in a little bit of EVOO. Then I cracked four eggs, sprinkled with oregano, sea salt, and chili flakes. Covered the skillet and cooked for about 5 minutes. Serve this over, low carb toast.
INGREDIENTS
- 4 Eggs
- ½ Zucchini
- 1 Leek
- ½ Onion
- 1 teaspoon Extra Virgin Olive Oil (or Avocado Oil)
- ¼ teaspoon Oregano
- Pink Sea Salt to taste
- ¼ teaspoon Chili Flakes
PREPARATION
- Chop everything finely and sauté the veggies in Olive Oil.
- Crack the eggs, top with spices of choice
- Cover and cook for 5 minutes.
