Easy Eggs

This simple meal turned out so good I had to share. I  make this using it whatever is in the fridge. 1/2 red onion, 1 leek, and 1/2 zucchini. I chopped everything finely and sautéed the veggies in a little bit of EVOO. Then I cracked four eggs, sprinkled with oregano, sea salt, and chili flakes. Covered the skillet and cooked for about 5 minutes. Serve this over, low carb toast.

INGREDIENTS

  • 4 Eggs
  • ½ Zucchini
  • 1 Leek
  • ½ Onion
  • 1 teaspoon Extra Virgin Olive Oil (or Avocado Oil)
  • ¼ teaspoon Oregano
  • Pink Sea Salt to taste
  • ¼ teaspoon Chili Flakes

 

PREPARATION

  1. Chop everything finely and sauté the veggies in Olive Oil.
  2. Crack the eggs, top with spices of choice
  3. Cover and cook for 5 minutes.
